Taste Vietnam Interactive Street Food Tour, Tastings & Lunch

We start the tour at Vy’s Market Restaurant. Here you will be guided around the many live food counters in this unique first-of-its- kind interactive dining venue in Vietnam. Here you can see, smell, hear, taste, touch and interact with many different food making processes. You can try samples from over 10 different food counters including banh mi, dumplings, pickles, weird & wonderful foods, our rationing foods in Vietnam that were in place for 45 years many more. You can see rice paper being made from ground rice and water, laid out to dry on bamboo and and then later roasted for rice crackers to eat with Hoi An chili sauce and salads, various shapes and sizes of rice noodles. Experience our famous local noodle dish Cao Lau, see the noodles rolled out by hand and cut in the traditional way with a long knife and then steamed over an open fire. You may participate in many of the street food counters cutting noodles, making rice paper and wontons, using the bun noodle machine and more. You are then shown how to assemble yourself (the ingredients are pre-prepared by your assistants) four different dishes at the street food counters before sitting down to eat what we have made.

Holiday Masterclass

Our day starts at 8.30am at Vy’s Market Restaurant. We walk to Hoi An’s colourful and bustling central market in small groups with an English-speaking tour guide where participants learn about the uses of different fresh noodles, how to recognise and buy fresh fish, fresh and dried spices, fresh herbs and their uses in our recipes and medicinal purposes, rice and different grains. You will also see and taste many exotic fruits. We then walk back to Vy’s Market Restaurant where you will be guided around the many live food counters in this unique first-of-its-kind interactive dining venue in Vietnam. Here you can see, smell, hear, taste, touch and interact with many different food making processes. You can try samples from over 10 different food counters including banh mi, dumplings, pickles, weird & wonderful foods, our rationing foods in Vietnam that were in place for 45 years, sweet treats and many more. You can see rice paper being made from ground rice and water, laid out to dry on bamboo and then later roasted for rice crackers to eat with Hoi An chilli sauce and salads, various shapes and sizes of rice noodles. We buy all the ingredients for our class and design our menu based on the best produce available that day. We then return to Vy’s Market Restaurant where you will be guided around the many live food counters in this unique first-of-its-kind interactive dining venue in Vietnam. Here you can see, smell, hear, taste, touch and interact with many different food making processes. You can try samples from over 10 different food counters including banh mi, dumplings, pickles, weird & wonderful foods, our rationing foods in Vietnam that were in place for 45 years, sweet treats and many more. You can see rice paper being made from ground rice and water, laid out to dry on bamboo and then later roasted for rice crackers to eat with Hoi An chilli sauce and salads, various shapes and sizes of rice noodles. Countryside Bicycle Tour & Cooking Class

We start the day 8.00am at our meeting point - Vy’s Market Restaurant. Your guides will arrive with your bicycles to collect you for the start of the scenic Countryside Bicycle Tour and Tra Que Herb Gardens. We cycle through the Ancient Town and quickly venture onto the country lanes, avoiding any heavy traffic and main roads. The sightseeing on this tour is rather spectacular, so make sure you bring your camera. We stop at rice paddy fields to learn about rice and how it is grown and harvested. We then continue on past water buffalo and exotic birds to the herb and vegetable gardens of Tra Que Village. Your guide takes you on an informative walk through the herb gardens, providing culture, history, cooking tips, and herbal remedies of the many herbs grown here. We visit a bean sprout grower’s home to learn about their growing and cleaning techniques and stop at a countryside market to learn about local fruits and vegetables. We then return to Vy’s Market Restaurant by bike where you will be guided around the many live food counters in this unique interactive dining venue. You can see, smell, hear, taste, touch, and interact with many different food-making processes. Try samples from over 10 food counters including banh mi, dumplings, pickles, weird & wonderful foods, rationing foods in Vietnam, sweet treats, and more. Experience how rice paper and noodles are made, and see the traditional Cao Lau noodles prepared by a local family. The cooking lesson lasts about 2 hours - our cooking teachers first demonstrate each dish before we prepare the same ourselves. After the lesson, we sit down and enjoy the meal we’ve cooked. You will receive recipes and a Vietnamese cooking utensil to take home.

Gourmet Class with Ms Lulu

Our day starts at 8.30am at Vy’s Market Restaurant. We walk in small groups with an English-speaking tour guide to Hoi An’s colourful Central Food Market, where participants learn about various ingredients such as fresh noodles, fish, spices, herbs, and grains. You will also get to see and taste exotic fruits. After the market tour, we return to Vy’s Market Restaurant where you will be guided around the live food counters. Here, you can see, smell, hear, taste, touch, and interact with different food-making processes. Try samples from over 10 food counters including banh mi, dumplings, pickles, and many more. See how rice paper is made, rice noodles prepared, and experience the famous local noodle dish, Cao Lau. You may participate in various street food counters by cutting noodles, making wontons, and using the bun noodle machine. The cooking lesson runs for about 3 hours, with Ms Lulu first conducting an in-depth theory session on ingredients, cutting techniques, Vietnamese culture, food history, nutrition, and herbal remedies. Ms Lulu demonstrates each dish, and then you prepare the same dishes yourselves. After the lesson, we sit down to enjoy the meal we've cooked, accompanied by unlimited drinks and sweet treats. You'll also receive a recipe booklet and a Vietnamese cooking utensil to take home.

Our day starts at 10.00am at Vy’s Market Restaurant. You will tour Vy’s Market Restaurant, which features a unique interactive dining experience. At the live food counters, you can see, smell, hear, taste, touch, and interact with various food-making processes. Sample from over 10 different counters, including banh mi, dumplings, pickles, sweet treats, and other traditional Vietnamese foods. See how rice paper is made and witness the traditional preparation of the local noodle dish, Cao Lau. Participate in activities such as cutting noodles, making rice paper, wontons, and using the bun noodle machine. The cooking lesson lasts about 1.5 hours. Our teachers will first demonstrate each dish, after which you will prepare the same dishes yourselves. Following the lesson, we sit down to enjoy the food with unlimited refreshing Vietnamese drinks, ice cream, and sweet treats. You will also receive a copy of the recipes and a Vietnamese cooking utensil to take home.

The Chef’s Table­—At Home with Ms Vy

For a special and intimate Vietnamese gourmet cooking and dining experience, join Ms Vy at her home. The four-hour event starts at 6pm with a wellness cocktail/mocktail prepared by one of our resident Herbalist Bar mixologists. Ms Vy will give an entertaining and informative overview of Vietnamese gastronomy, discussing its cultural, historical, philosophical, and medicinal aspects. She explains how climate and landscape shape Vietnamese cuisine. Guests will then begin cooking at their own stations, following Ms Vy as she prepares a typical Hoi An meal, depending on what's fresh and in season at the local market. The meal usually includes one soup, one main, one side, one small bite/appetiser, one pickle, and a herbal tea served with a snack. After the cooking session, guests will sit down together to enjoy the meal while conversing with Ms Vy. Popular discussion topics include Vietnamese women and their roles in society, food philosophy, food as medicine, and Vietnamese cooking techniques. Ms Vy will also share stories about being a businesswoman, mother, and chef.
